OK, even I don’t get excited by rice stew. But I made a batch today, and it’s good and I’m pleased, so there.
- 2 1/2 lbs chicken thighs
- 4 cups vegetable stock
- 7 cups water
- 1 1/2 cups basmati rice
- 3 tsp. kosher salt
- 1 tsp. black pepper
- 2 tsp. minced garlic
- 5-6 1 inch-ish pieces of fresh ginger
- Mix, bring to boil, turn down and simmer for an hour or so until it gets to the consistency you want
It’s good. More salt, pepper and garlic next time and use fresh garlic.
